Mezcal Grapefruit Sour

This mezcal grapefruit sour is the perfect answer if you are missing a fancy $14 cocktail. It’s smokey, sweet and frothy. The candied grapefruit not only makes it beautiful to look at, but also creates the syrup for the cocktail as well. Make these on Tuesday to make your Cinco de Mayo a little fancy.

You’ll begin with making the candied grapefruit and grapefruit syrup. The syrup will keep 3-4 days in the fridge. It’s great in multiple cocktails if you want to switch it up. (try this syrup in the Triple Shot Margarita for a grapefruit margarita) Making the candied grapefruit is really simple. You just boil it down with sugar and water and then place the slices on a cookie sheet lined with parchment paper. Sprinkle with sugar and place in the fridge to chill and they are good to go.

The foam on the top of the cocktail comes from the egg white. You really need to shake the cocktail shaker hard to get the proteins in the egg white to breakdown. If you have never had egg white in a cocktail it’s amazing! I know to some it might sound gross at first but it makes it creamy and delicious. You cannot taste the egg at all and it creates such a pretty little foam on the top.

Ingredients

Candied Grapefruit/ Grapefruit Syrup

  • 1 grapefruit, sliced
  • 1 cup sugar
  • 1 cup filtered water
  • 1/2 cup granulated sugar, for sprinkling

Mezcal Grapefruit Sour

  • 2 oz Mezcal (I used Banhez)
  • 1 oz grapefruit juice
  • juice from ½ lime
  • 1 oz grapefruit syrup
  • 1 egg white
  • 1 candied grapefruit

Instructions

Candied Grapefruit + Grapefruit Syrup

  • In a medium pot heat the water and sugar. Bring to a slight boil and then reduce to medium low to simmer. Add the sliced grapefruit. Cover and cook for 45 minutes.
  • Meanwhile, place a sheet of parchment paper on a cookie sheet. When the candied grapefruit is done, place the slices onto the cookie sheet. Sprinkle with granulated sugar. Place in the fridge for at least a half hour to chill. Warm grapefruit will not float in the drink. Chill the remaining syrup as well.

Mezcal Grapefruit Sour

  • In a cocktail shaker filled with ice add the mezcal, grapefruit juice, lime, grapefruit syrup and an egg white. Place the lid on and shake aggressively. To foam the egg white it needs a little extra shakin'/ Strain into a coupe glass and garnish with a candied grapefruit slice.
